Creamy Spinach Soup is the perfect comfort food!

Warm up on a chilly winter day with this delicious and creamy spinach soup. It's simple to make and loaded with flavor. You'll love the delicious Parmesan cheese topping!

Ingredients:

1 tablespoon olive oil 1 large onion, chopped 3 cloves garlic, minced 8 cups vegetable broth 2 bunches spinach, washed and chopped 1 cup milk 1/2 cup grated Parmesan cheese Salt and pepper to taste

Instructions:

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic and cook until softened, about 5 minutes.
  2. Add vegetable broth and bring to a boil. Add spinach and cook until wilted, about 2 minutes.
  3. Reduce heat to low and add milk and Parmesan cheese. Season with salt and pepper to taste. Serve warm with a sprinkle of Parmesan cheese on top.

Ingredients:

1 cup dried cannellini beans, soaked overnight

1 large onion, chopped

2 cloves garlic, minced

1 green bell pepper, chopped

1 carrot, peeled and diced

2 tablespoons olive oil

6 cups chicken or vegetable broth

1 (15-ounce) can diced tomatoes, undrained

1 teaspoon dried basil leaves 1 teaspoon dried oregano leaves ½ teaspoon black pepper 1 (15-ounce) can corn, drained

Instructions:

Sort and rinse the beans.    In a large soup pot or Dutch oven, sauté the onions, garlic, and bell pepper in olive oil until tender. Add the chicken broth, tomatoes with juice, basil, oregano, and pepper. Stir in the beans and corn. Bring to a boil over medium-high heat.  Reduce the heat to low and simmer for about 1½ hours or until the beans are soft.   Serve hot with some grated Parmesan cheese on top if desired. Enjoy!

Heat olive oil in a large saucepan over medium heat. Add onion and garlic, and cook until soft, about 5 minutes. Stir in vegetable broth and spinach. Bring to a boil, then reduce heat to low and simmer for 10 minutes.

Add milk, pepper, nutmeg and sour cream. Season with salt to taste. Garnish with chopped parsley if desired. Serve hot.

1 can diced tomatoes

1 can corn

1 tsp chili powder

1 tsp garlic powder

1/2 tsp onion powder

Instructions

In a large pot or Dutch oven, combine all the ingredients. Bring to a boil over medium-high heat, then reduce the heat to low and simmer for 10 minutes. Serve hot with shredded cheese and sour cream on top. Enjoy!
